“Øllebrød” – Bread Soup
In the morning there is nothing better than starting your day with a nice warm bowl of porridge. One variation that is very popular with the German minority in Denmark is Øllebrød. As breakfast or a snack- øllebrød is always a win.
150g dark whole grain bread
200 ml light beer or water
1 teaspoon honey
Pinch of salt
Or any other topping that comes to mind
Cut the whole grain dark bread into small cubes and put it in a pot together with the beer/water, a pinch of salt and honey. Let it rest for at least 15 minutes, before turning on the stove. Cook the porridge until it has the consistency you prefer.
Serve it in a bowl with the topping of your choice.
