Pears, beans and bacon from the North Friesians

Ingredients (for four servings):

  • 4 slices  of smoked belly, with a thickness of approx. 0.5 cm
  • large onion
  • 500 g green beans
  • 1 branch of savory
  • 500 g potatoes
  • 4 pears (cooking pears)
  • can of pears and the dripping juice of it
  • 2 tbsp flour
  • White pepper
  • Water

 

Put the bacon slices and the small-diced onion in a mixture of 3/4 l of water and 1/4 l of the pear juice and boil it for 20 minutes. Add the cleaned and washed beans as well as the savory and cook it for another 15 minutes. Then add the peeled and diced potatoes and the washed whole pears and cook it again for 15 minutes.

When everything is cooked, mix the flour with a little of cold water, add it to the rest, and boil it again. Add white pepper and pear juice. Serve the pears with the stems on the top on a warm plate.

Hint: Cook the dish without a lid. The liquid optimally reduces as a sauce.
