Old-fashioned apple cake

For 4 servings

 

Apple Compote ingredients

 

300 g Apples

30 g sugar

1 knife tip of vanilla powder

1 knife tip of cinnamon

1 knife tip cardamom

100 ml water

 

Macaroons ingredients

100g almond flour

120 g powdered sugar

1 egg white

 

Caramelised breadcrumbs:

150 g breadcrumbs

85 g sugar

75 g butter

 

Topping ingredient

200 ml of cream

 

Cut the apples in cubes and bring them to boil together with the other ingredients for the compote. After that, let it simmer for 30 minutes more. Stir it a few times while it’s boiling.

For the macaroons mix almond flour and powdered sugar until it becomes one unit. Mix the egg white in til it gets one mass. Fill it in a piping bag and make about 30 drops with a size of a 2 Euro coin. Bake it in a preheated oven at 150 degrees. Let it cool on the sheet.

Melt the butter in a pan and sauté the breadcrumbs for a few minutes. Then add the sugar and caramelise while stirring constantly until its golden brown. Let it cool on the sheet

Whip the cream and put the apple compote, macaroons and rasp in layers in a large glass bowl. Finish with a layer of caramelised breadcrumbs and then put the cream on. Decorate  with the rest of caramelised breadcrumbs.
