Kürtöskalács – Chimney Cake from the Hungarian minority in Romania

You need for 10 servings:

1 kg flour

125 g butter

1 egg

Lemon peel

5 g yeast

100 g sugar

1 pinch of salt

500 ml milk

Take the yeast and the flour, and mix it well with the egg, lemon peel, sugara, salt and the milk. Let it set for an hour in a bowl.

Start the fire in the grill or barbeque, make sure the coal is nice and hot. No open flames!

If the dough is done, take it out of the bowl and put it on a floured table. Roll it flat and cut it into long strips. If necessary, put more strips together to make it longer.

Heat the tube, which can be made out of metal or untreated wood, and grease it in a little butter.

Roll the dough strips gently around the tube, but make sure it doesn’t overlap. If you’ve done this, roll the tube with the dough a little on the floured table, to push it flat.

Coat the dough with melted butter, and roll this in the sugar while still hot.

Keep the tube over the coal, while turning it slowly. Wait until it is golden brown.

When the dough is done, take the tube and make sure to keep it mostly horizontal (it can fall off!). Turn the tube vertically upon a hard surface, and gently tap so the dough will slide off. Prevent it from collapsing by going slow. You can stabilize your dough roll with a bottle or round cardboard.

Let it cool and enjoy!
