Beef with horseradish sauce from the Lusation Sorbs

For 4 persons

 

Ingredients cooked beef

1 kilogram beef (optimal: marbled with fat)

Celery

Carrots

Onions

1 1/2 litres of water

1 bay leaf

1 carnation

2 grains of allspice

 

Ingredients horseradish sauce

100g butter

50g flour

0,5l beef broth

2 eggs

100ml milk

100 to 200g fresh horseradish (depending on the desired spiciness)

 

Preparation of the beef

Wash the meat, put it in cold water, chop the vegetables and add the spices. Now cook the meat for 2 hours and strain it.

 

Preparation horseradish sauce

The horseradish sauce should be prepared about half an hour before serving. Mix the butter and flour, add the beef stock and cook until it becomes a porridge. Whisk the eggs in the milk and add to the mixture. Grate the fresh horseradish (ATTENTION: the effect is the same as cutting onions) and add it to the porridge.

 

Now serve the beef with the horseradish sauce and bread, boiled potatoes and cauliflower go best with it.
